Homemade soup help please
OK, so on Sat. I made Oven roasted boneless, skinless Chicken breasts seasoned with rosemary, thyme and garlic. I surrounded the chicken with carrots and potatoes.
Turned out Delish!!!
I want to make soup out of the leftovers. Anyone have any tricks or tips?? I've never really done this before
I figured I'd dice/cube the chicken and potatoes. Slice the carrots (there weren't too many left so I definitely need to add more), and want to add in some sliced celery too.
How do I do this with the fresh carrots/celery vs adding the already cooked carrots/potatoes?
Other than some Chicken Stock....should I add anything else?

Bring Chicken Stock to a boil
Add fresh vegetables and seasoning (pepper, parsley, dill)
Cook about 15 minutes
Add diced chicken & left over vegtables. Cook another 5-10 minutes.
Cook pasta, rice or noodles on the side and add right before serving.
Easy Peasy and going to be delicious!

Or you could saute some evoo in a pot with a chopped onion and some garlic..cook until soft
Add some basil, parsley and oregano.
Then add the fresh veggies..cook those for a few minutes
Add the chick broth and your other chicken/veggies
Then add either rice or pasta-i cook it all in the same pot

I always find the key to a good soup is fresh herbs. Just add while it simmers in the broth.
I love to add leeks as well, it really seasons the broth.
