Here is what I do and we love it.

Green Peppers (makes about 5)
1lbs ground turkey
brown rice (i use the instant) 1 bag
diced tomatoes
tomato sauce (1 can)
chopped onion
minced garlic
frozen peas
salt
pepper
Italian seasoning.
Parm Cheese
shredded Mozz cheese

Cook rice as directed. Brown ground turkey in skillet with onion, peas and garlic. Cook until onion is soft. Add seasoning,Parm cheese, diced tomatoes and 1/3 your can of sauce.
Spoon mixture into peppers top with remaining sauce and shredded mozz cheese.

Bake on 350 for 50mins.

I got this from the Rice a Roni Spanish Rice box. So easy & so good. Makes great leftovers.

California Stuffed Green Peppers

Preparation Time: 10 Minutes
Cook Time: 35 Minutes
Time to Table: 45 Minutes
Servings: 6

3 large green bell peppers
1 (15-ounce) can tomato sauce, divided *
1 (6.8-ounce) package RICE-A-RONI® Spanish Rice
1 pound ground beef**
1 large egg

• Cut each bell pepper in half lengthwise; remove seeds and stems. Set aside.
• In large bowl, combine 1 cup tomato sauce, rice-vermicelli mix, Special Seasonings, ground beef and egg. Stuff pepper halves evenly with beef mixture.
• In large skillet, arrange pepper halves meat-side down. Pour remaining tomato sauce and 1-1/2 cups water evenly over peppers. Bring to a boil; reduce heat to medium. Cover; simmer 35 minutes or until meat is done and rice is tender. (I usually use more than 1 lb of meat and overstuff the peppers, so I usually cook for 45-50 min.)

Serve peppers with remaining tomato sauce mixture from skillet.

*I usually use a large can of tomato sauce or crushed tomatoes. I just take what's left over (after you take out the 1 cup for the meat) and add it to the 1 1/2 cups of water that you pour over the peppers. I like a lot of extra sauce.

**You can also substitute meatloaf mix for the beef. I actually like it better. The filling tastes more like meatballs.
