What would you do
to fill in mini phyllo shells?
They don't have to be cooked, but they can be.
Can be anything, even dessert.

I would bake them for a few minutes until crisp. Then whip together a little bit of honey and either cream cheese or mascarpone (or maybe ricotta?), add to shells, and top with seasonal fruit -- like sugared cranberries, diced caramelized pears or apples, or raspberries.

mini spinach pies.
I would thoroughly drain the excess water from some frozen chopped spinach, sautee with some finely minced garlic , then combine with some crumbled feta and fill the cups and bake until gooey and hot.

fold them into cones.. bake, cool and then add nutella
you can also make baklava.. butter, sugar syrup, nuts in couple of layers.. and bake

Cube up some brie and put one cube of brie with a mixture of brown sugar, a little bourbon, maybe a little vanilla, and some pecans or walnuts, bake in the oven for a few min. Yum!

Mushroom Tartlets
3 tbs butter 1 cup chopped leeks (white and pale green parts only) 1 large garlic clove, minced 4 cups chopped wild mushrooms (crimini, shiytake, portobello, oyster, beech - no stems on the shiytake or oyster -- whatever you can get your hands on really) 2 tbl cream sherry 24 tartlet shells (frozen aisle) 1/4 cup grated parm cheese
melt butter in heavy skillet over med high heat. Add leeks and garlic. Saute until leeks are soft (4 minutes) add mushrooms and saute until tender (5 more min) Add Sherry until absorbed, about 1 minute. Season filling with salt and pepper. Cover and chill.
pre-heat oven to 400. spoon 1 tbls filling into each shell. sprinkle with 1/2 tsp cheese. Bake until heated about 5 to 8 minutes.
Serve warm.
*** I make the filling ahead of time and bake at 375 degrees for a bit longer to head them back up.
Brie & Jam Cups: Place Brie and Jam into cups and heat until melted. Use any Jam you like - raspberry, black cherry, orange, etc..
Brie & Nutella Cups Blace Brie in cup. Top with a little nutella and chopped toasted hazelnuts or slivered almonds. Heat until warmed.

I love them with crab salad in them!! Thats my favorite. You take crab meat and celery and mayonnaise and mix it all together and then fill the cups. So yummy.
If you are thinking dessert, a dark chocolate mousse with some fresh raspberries or blueberries on top would be good!!

was going to say spinach pies...but since someone said that maybe mini "empandas" season the beef , add some onion top it with a little cheese and minced green olive

Asparagus roasted with salt, pepper, and olive oil. Fill the cups and add a squeeze of lemon and some feta.
