Anyone have a great pasta fagioli recipe?
I'm in the mood to make a bean/pasta/grated cheese type of soup. Any recipes? Don't have any protein to use-except bacon on hand.

I make this all the time
You will need: 1/2 lb of Ditalini Pasta (approx) I sometimes use 3/4 of a box. 2 cans of cannelini beans (15 oz cans) 1 large carton of collagen broth 1 small can of tomato sauce (I use the small hunts can) 1/2 onion (chopped) 4 cloves of garlic (chopped) salt, pepper, red pepper and oregano to taste
Directions: Saute onions in Olive Oil, then garlic. (be careful not to burn the garlic). The add the 2 cans of beans (entire can, juice and all). Cook this on a high flame x 15 min . The add broth and tomato sauce and a bring to a boil Add spices.
In a separate pot cook the pasta as directed on the box.
Slowly add the cooked pasta to the bean mixure.
Sometimes you need to adjust the consistency of it by adding additional can of broth. Let simmer on low heat.
I like it more soup, so I always add extra collagen broth , but some people dont. Sprinke grated cheese on top when serving!

I love the recipe that my family uses!
-1lb. pasta (small round tubes about an inch long or you can use shells) -2 15oz can white cantelloni beans (drained and washed) -1lb bacon (chopped) -1 onion -1-2 cloves garlic -2 16oz. can Huntz Tomato sauce -s&p -grated cheese for topping
-Cook the bacon in a pot that you are going to eventually throw everything else in. Bacon should not be crisp but not be too soggy either. Once bacon is done, take it out along with 80% of grease.
-Sautee onion and garlic in bacon grease until onions are clear.
-Then add tomato sauce and bacon and let cook for 15-20 mins
-Put water on for pasta and add beans to sauce. Once pasta is done then add to the sauce pot and let cook for 2-3 minutes.
-add S&P to taste and grating cheese when served.

I like mine very basic
- 2-3 cloves of garlic pressed/chopped - saute with olive oil in pan until just about golden - add white canellinni or red kidney beans an mix with garlic and oil - add one can of water - add salt/pepper and crushed red pepper - boil small pasta and reserve some extra water if needed - drain pasta and mix with beans-add reserved water if necassary.

We make it over pasta in my family, so it's more of a pasta meal than a soup.
1 lb. pasta (we normally use ditalini, but cavatappi and shells are good too!) 1 can kidney beans 1 can tomato sauce Salt Pepper 1.5 Tbs. Basil 1 Tbs. Oregano 1.5 Tbs. Onion Powder 1 Tbs. Garlic Powder
In a small pot, combine kidney beans (don't drain them), tomato sauce and spices. Bring to a boil and then simmer for 30-45 minutes until beans are tender. Pour over cooked pasta.
