What side dish to make
With roast beef? I was going to do twice baked potatoes, but DH doesn't want potatoes.
Should I just do mixed roasted veggies and a salad?

I would probably so the roasted mixed veggies and maybe brown rice but, I always need to have some sort of starch because i love carbs

DH is trying to do lo carb, so we've cut out potatoes all together. Have you tried roasted butternut squash? I cube it up and then toss with olive oil, fresh minced garlic, salt and pepper. I usually make it every time we have steak or meatloaf and we both love it.

noodles maybe... especially if you are gonna have gravy!

I would do a green veggie and maybe crescent rolls. Although mashed potatoes would be my first choice!

I was going to say noodles as well. The egg noodles go great with roast beef!

DH is on a low/no-carb kick and won't eat any carbs except on Saturdays. So that eliminates potatoes, rice, pasta, noodles, etc.
I ended up making roasted veggies and creamed corn.

I have gravy, but it's an italian red gravy with peppers and onions.....not a typical brown gravy.
