remember, when Gulliver traveled....

Chopped!! I need some help!

so I made too many lasagna noodles and I need to get rid of them.

I have

cooked lasagna noodles.
baby spinach
chicken cutlets (thinly sliced)
mozz, ricotta, feta, and parma cheese
a couple of olives
a whole butternut squash

a fairly decently stocked fridge and pantry for 'extras.

what would you come up with?

I'd roll up the lasagna noodles with a mozz/ricotta/parm mixture and blanched spinach. Bake w/sauce and mozz. Serve w/baked cutlets on the side.

Cut them into pieces, fry in a pan with some garlic, sprinkle parm cheese over them and dip into marinara with a little ricotta mixed in. Chat Icon

Or just cut them up and freeze so you can toss into soups, etc.

mmm... I'd roll up the butternut squash with the cutlets. and drizzle them in some garlic butter. they'd be delicious!!!

i would roast the squash and then mash it and combine with the ricotta and mozz and even the spinach and then make butternut squash lasagna roll-ups!
Serve with chicken cutlets... maybe parm crusted?

this sounds yummy. I didn't have any sage though.

I ended up making a lasagna bianca with sauteed garlic and spinach (fitting since I cooked with my niece Bianca Chat Icon ) and chicken cutlets breaded in an herbed cornmeal dredge.

the butternut squash I will probably use to make risotto tomorrow.
