Can you share your recipes? Also can you refrigerate these and then heat up as necessary? I am thinking this can be a low fat breakfast other than my bagel thins :)

I didn't make a full on fritatta b/c I couldn't be bothered putting it in the broiler but the other night I needed a quick dinner and I did
6 eggs 2 cups milk feta breakfast sausage (6 links chopped up) peppers onion bread S&P
I made it like a casserole. Mixed eggs/milk/peppers/onions In the pan prior to egg mixture: placed bread on the bottom of pan put the feta on top of bread put crumbled sausage over that then egg mixture
baked for 40 minutes I think at 375? I don't remember exact.
all of this can be made low fat too- egg whites/lowfat milk/low fat feta etc. . .

love making these with left over roasted potatos or fires...saute some peppers and onions until soft, throw in left over potato to warm up pour 6 scrambled eggs mixed with a splash of milk....help the edges and middle cook up by lifting aorund the edges gently (try to avoid pushng it in so all the veggies/taters get stuck in the middle)...once firm around the edges and slightly wet, i sprinkle shredded cheese on top and broil for about 3 minutes...keep a close eye and check miniute by minute until you get used to how your broiler works....it burns faster than you think....
i do the same with left over steak, ham, zuchinni, asparagus etc...pretty much anything you can think of that tastes good with eggs...its the easiest ten minute meal i know!

I love making these also (we call them Tortillas) I took a master class from one of my friends who makes amazing ones. I don't follow a recipe, but here is what I do. Slice up two big red onions, soften them in a deep frying pan with a good amount of olive oil. In the meantime I slice up some parboiled waxy potatoes (I use either new potatoes or a type called Cyprus) when the onions are soft, I throw in some cut up Chorizo, I scramble six eggs with a touch of milk, throw that in the pan, let the sides start to cook and leave it on a really low heat for about 20 minutes. After its quite solid, I turn it over using a place.
I eat it with lots of hot sauce and some salad. Yummy! I might make one today!

my grandma always made us potato and egg fritattas cold when she'd come over.....so yummy leftover and cold!

Spray oven proof frying pan with PAM Heat 2 tbs olive oil & 1 tbs butter Wash and dice bunch Asparagus & 2 cloves garlic Sautee asparagus & garlic until tender. (about 6-8 minutes) Season with Salt & Pepper Wisk 4 eggs and 8 egg whites with 1/4 cup milk Season with Salt & Pepper and 1/4 cup Grated Cheese Pour into pan Cook eggs on medium-low heat, stirring often, moving the cooked parts into the middle. When 50% cooked, put in 350 degree oven for 15 minutes Shave 1/4 cup Parm Cheese (or use grated) over the top Broil until lightly brown
Turn onto platter and cut into pie slices. ou can refidgerate for 3 days or freeze in individual slices for 1 month. To reheat frozen fritatta, cover with wet papertowel and microwave on high for 50 seconds.
ETA: There are so many variations to this ex: Potatoes, Peppers & Onions, Sausage & Cheese, Ham & Vegetables, Spinach & Mushroom ....
I also make 'muffins' .... prepare whatever combo you like, pour mixture into PAM sprayed muffin tins. Bake at 350 until golden brown. Let cool. Pop out of muffin tins and freeze. Last week I made: Eggwhites with Spinach & Mushroom & Swiss Eggwhites with Onion, Scallion, Red Pepper and Tomato Whole egg cracked into a 'shell' of bacon and topped with 1/4 slice American Cheese
