I have been making lentil soup a lot and the last time I went shoping I bought red lentils instead of green. There is a recipe on the bag for lentils over rice but I havent made it yet. Last night while I was in waldbaums, a woman behind me was buying two bags of red lentils and I asked her how she prepares them. She told me she makes soup or lentil loaf. Honestly, I never heard of it before. She said it's really just meatless meatloaf..with spinach and other vegetables...the way she described it sounded good and today I went searching for a recipe. Honestly, I dont see anything that even comes close....or that I have any desire to make. most are vegan recipes but I am certain she said spinach, carrots, eggs, milk, breadcrumbs...wish I had more time to chat!!!

Anyone ever make this and recommend their recipe?

It also appears that the lentils have to be cooked first? or soaked? I thought you didnt need to soak lentils?
