Tunafish & Egg salad
If I make it in advance, do you think it's okay to freeze in small sandwich size portions? I'm having shoulder surgery on Tuesday and trying to make and freeze what I can now because it will be impossible to cook and prepare stuff with only one arm! DH won't be home when it's time for me to eat

I wouldn't freeze it especially if you are using Mayo in it.

I wouldn't freeze it either--but it will keep in the fridge for a few days. Can you just have a batch in the fridge and make a sandwich one-handed? It shouldn't be too hard to scoop a spoonful onto a roll.

Agreed, don't freeze.
Make a batch and keep it in the back of the fridge. It's the coldest there. Should really keep for 3-4 days.

Yeah, I was planning to keep some in the fridge. I guess DH will just have to make it on the weekend. This whole one arm thing is for the birds!

dont freeze it, but you can boil/chop the eggs now, and just add the mayo when you need it in a few days

Put the bowl on a damp dishtowel on the counter to keep it from slipping.
