Re: Tortellini Soup Recipe
Well I make mine with butter, so it should taste like butter.
I melt 1 tablespoon of butter in my stockpot, then saute an chopped onion and like 2 teaspoons of oil.
I then add like 3 stalks of chopped celery and a cup or so of chopped carrots and saute until they start to soften.
Add broth and cook till the veggies are cooked. I add pepper and a bit of rosemary.
I used refrigerated tortellini and cook 7 mintes or whatever the package says. Top with a sprinkle of parmasean cheese and enjoy!

Re: Tortellini Soup Recipe
I make a very easy and yummy one. No butter but lots of cheese!
Cook tortellini according to directions in one pot. Leave to cool or rinse with cold water.
Meanwhile, bring to a boil chicken stock, thyme, bay leaf. Let simmer until ready to serve.
in each bowl put some tortellini, cover in broth and add a generous amount of your fave grated cheese (I love romano). So quick and easy. You can also throw in some baby spinach just before serving. It will wilt nicely in the hot broth.
