Can I freeze...
Sugar Cookies?
Brownies?
Also - if I do, how long to defrost- just the night before?
I want to ice the sugar cookies after they defrost.

Yup and yup. I freeze brownies all the time 
If you want to defrost without the microwave, yea I'd say ut them out the night before.
