depends on what kind of panini we are making.
sometimes we'll use a crusty french baguette
if we can get to the farmer's market, we'll buy country bread which is great for panini!

We usually use a nice focaccia - I like making it by picking up some pizza dough at the pizzeria. Spread it into a cookie sheet, add a little salt, some onion, rosemary or whatever you like. Then bake it up until golden. Cut into the sizes that you want for your sandwich and ta-da!

I use Italian bread. But I normally only make ham and cheese paninis...nothing crazy.
