My Meatball Recipe aka Dom DeLuise’s Mom’s Meatball Recipe

Dom DeLuise’s Mom’s Meatballs

2 lbs of ground chuck
½ lb of ground pork
2 cups of Italian-flavored bread crumbs
4 eggs
1 cup of milk
1 cup of fresh parley, chopped
½ cup of grated cheese
1 tablespoon of olive oil
2 garlic cloves, chopped very fine
1 onion, minced
½ cup of pignoli nuts (pine nuts) (optional) – I DON”T USE THEM

Place all ingredients in a large bowl & mix thoroughly. Let stand ½ hour. Shape into medium-size meatballs. Fry gently in olive oil until lightly browned or place on foil on a cookie sheet & bake for 1/2 hour at 350 degrees. (BAKE FOR A ½ HOUR – don’t bother frying).

Gently place in your own hot spaghetti sauce & cook on medium low for 1 hour.

You can quadruple the recipe ( You’ll have 100 meatballs), place them on large Teflon baking pans. After they’re baked & cooled, put 20 at a time in large Ziploc bags & pop them in the freezer. They they’re ready anytime. You can pop them in the microwave.

About 20 meatballs


My notes;
I’ve never bothered to quadruple the recipe, I’ve doubled it – these are a lot more then 20 meatballs. I think Dom Deluise has a huge eating problem & thinks ginormous meatballs are medium sized.

Yes you have to use fresh parsley- it does make a difference. Don’t get sausage meat instead of ground pork – I did it this past Sunday & I think it was a mistake.

As for the frying, DH will sometimes fry them right before we eat them & bake them in the oven. He refuses to microwave them but hey – what he doesn’t know won’t hurt him.

I do this too except no pignoli nuts.

I just made them last night and DH was loving them!

I do something similar but my pork to chuck ratio is almost 1:1.

and you think Dom DeLuise had an eating problem Chat Icon Chat Icon Chat Icon making only 20 out of this amount would probably resemble the moons of Jupiter!

I also use a 3:1:1 ratio of beef, pork and veal.

I made meatballs last night (similar recipe) but I added 2 eggs instead of 1 and the differences was incredible! So incredibly light and tender!

I did 1 1/2lbs of meat and did 2 eggs and it was a very good difference.

I use this recipe too only I add veal to the mixture as well.
