Can Someone please tell me how to make antipasti...

I am not even sure if I spelled it right. I am having company over this weekend ( total of 6, but 5 big eaters)and am making meatballs, sausages, sauce, pasta , and bread. I want to make antipasti and am not sure what goes into it or how to arrange it? I was thinking- olives, roasted red peppers, rolled up ham, mozzarella balls, marinated mushrooms, peperoni, genoa salami... what else am I missing? and how much of what? Help and thanks in advance!

my family does a very traditional antipasto for the holidays which includes, chunks of provolone, rolled prosciutto, roasted garlic, roasted peppers, mushrooms, dried sausage, genoa salami, vinegar peppers, and both green and black olives. The dressing is usually just drizzled olive oil and red vinegar

We like to do it with a cabbage base. We cut up a small green cabbage and season it with some oil and salt (sometimes the juice from the anchovies or the roasted red pepper jars as well). Then, in a large bowl or platter- the cabbage goes in. On top we have a bunch of cold cuts, proscuitto, salami, provolone, fresh mozz. and any other cheeses or meats as well as olives. We usually have green olives with pits and kalamata olives. We also always have anchovies, roasted red peppers and fresh cucumbers.

Well, everyone really makes it differently. There's antipasto salad..which is what the above-posters are referencing.

i make an antipasto platter. Assorted Italian cheeses cut into chunks (parmigianno, provolone, grana padano)
Dried sausage (i do spicy & sweet)
Sliced imported prosciutto (can leave sliced & flat or make rolls..even roll around thin italian breadsticks)
Marinated Artichoke hearts
Sliced roasted red peppers
assorted olives (green, black, marinated or not)
Mozz balls
Sliced marinated eggplant
Arrange it all on a platter or two
I like to serve with thin sliced crusty italian bread & put some olived oil & venegar on the table for dipping.

Really, it's up to you and what you & your guests like. Check out an italian grocery store..see what they have fresh in the deli section and jarred

I make hot and cold.

Hot is with eggplant rollantine, baked clams and stuffed shrimp.

Cold is with genoa salami, prosciutto, provolone, mozz, tomatoes, marinated mushrooms, marinated artichokes, roasted red peppers and olives.

I make a cold antipasto for holidays:

I line a platter with lettuce (to make it look pretty). Then I roll genoa salami, provolone, prosciutto, and ham, and alternate them around the rim of the platter. Then I put roasted red peppers, marinated olives, marinated mushrooms, marinated artichokes, and sometimes fresh mozzarella balls in the middle.

here is our family's way! my dad worked in an italian deli for years!

line platter with lettuce-
-genoa salami - roll it
-proscuitto (the good stuff) - hard toroll, but try!
-hot capicola - roll it
-sopresatta - roll it
-dried sausage - cut into slices
-sharp provolone - cut into chuncks
-slicing provolone - hard to roll, but try
-Mozzarella balls
-marinated artichoke hearts - scatter over, drizzle some on the jiuce over platter
-roasted peppers or vinegar peppers,scattered over
-black olives, scatter over

we roll the meats and put them each on a side. cheeses go in the middle, other things get scattered over!

this is what I do...plus we also have peperoncini and hot stuffed peppers.

I put everything on a big platter I have just for antipasto...it's tremendous and has all different compartments (for lack of a better word lol).

What we usually do on a huge round plate:

head of lettuce
cover all the lettuce with different italian meats
line the edge with steamed broccoli
can of drained tuna in the middle
then load up the plate with cheese: provolone, mozzarella, etc
olives: stuffed, green black
marinated mushrooms
roasted peppers
pepperchinnis
breadsticks wrapped in proscutto

yummy!!!
