Re: chopped spinach...

Depending upon if I need it as an ingredient or am serving it as is, I take paper towels and squeeze it between them. The amount of water I squeeze out is dependent upon how it will be used. I also love seabrook creamed spinach. No draining needed.

I microwave it. Then I can just drain all the water out of it. I feel like it doesn't absorb as much water as when you steam or boil it.

i normally do the paper towel thing when im going to use it as an ingredient in another dish... but when serving as-is i end up squeezing it between a slotted spoon and a fork... LOL....

has anyone seen a spinach squeezer on QVC lately?

same.

If I use fresh spinach, I just scoop out with a slotted spoon and serve in a little bowl on the side to avoid the puddle on the plate

Re: chopped spinach...

I have never boiled it. Seems to complicated and I always think it will be runny like you said. I use frozen spinach in certain recipes - there is a stuffed chicken I use it in. but it has me thaw it and then squeeze out the water before cooking with it.

if I am making it as a side dish, I use fresh. It is less work for me and IMO tastes better and is faster to cook it. I just throw it in a skillet with evoo and garlic and a teenietiny bit of kosher salt and black pepper.

Fresh always. I hate frozen unless it's creamed spinach.

Re: chopped spinach...

if you put it in a saute pan and just use a few tablespoons of water and let the water boil out it eliminates the problem.
