Chicken dilemma
I was expecting company yesterday so I prepared 2 cornish hens. Well, they had to cancel last minute. We ate one yesterday but DH doesn't want it again today.
Can I cut it up and add it to soup? would I add it at the end since its already cooked? Any other idea (they don't like chicken salad)

Yup..
you can also make chicken quesadillas, enchiladas, chicken wraps, over salad, soup stock, chicken (and/or with rice) casserole, chicken chili, etc.
so much to do! :O)

We like making chicken paninis with our leftover roasts. DH likes it when I put avocados, cheese, and tomatoes in his panini.

To answer your question on soup: I would saute the veggies first and then add broth and allow it to simmer with some herbs/seasonings. I would add the meat last - make sure to pour in any liquid from the meat, it will help flavor the broth.
