sauce recipes
I want to start making my own sauce does anyone have a good one...we prefer no onions unless I grate it!!!

well, i definitely use onion (one vidalia usually)
garlic cloves (6 or so) dried oregano (about a tablespoon) fresh basil (maybe 2 bunches) red pepper flakes (sparingly) sugar (about a teaspoon, and add to taste) 2 big cans crushed tomatoes plum tomatoes (6-8) (use a paring knife to cut out the hard top and toss in the food processor, seeds, skins, and all) a generous splash of wine (red or white depending on what flavor you want, like i do red for meat sauce and white if i want a light marinara)
i saute the onion, garlic, herbs, and red pepper flakes in a healthy dose of EVOO in my big sauce pot. add the tomatoes and wine. simmer.
then it's all tasting and tweaking with salt, maybe more sugar, wine, etc.

i use giada's marinara recipe. love it

I do it by eye for the most part:
two cans puree one can crushed about 4 table spoons evoo s and p two cloves of garlic or jar ( ) oregano to your liking basil to my heart's content
I put this in my crock pot usually after I had sausage or meatballs or onions but I cook them first

1 giant can whole peeled tomatoes (or two smaller can) 1 can tomato paste 3 garlic cloves a few tbsp olive oil salt and pepper oregano parsley basil
Put the tomatoes in a blender and liquefy them. Strain out the seeds.
Sautee garlic in a sauce pot just until you can smell it. Add liquefied tomatoes and bring to a boil.
In a separate small pot, bring about 2 cups water to a boil an add tomato paste. Break down with a fork and liquefy and bring to a boil. Add to tomato/garlic mixture.
Add salt and pepper to taste and about a tablespoon each of oregano, parsley, and basil.
Cover and simmer on stove top for at least one hour.
