Here is what I do, make slits in meat and stuff with garlic, S&P paprika on outside and bake at 350 for 20 mins a lb.
You can also coat outside with dijon mustard.

I make a marinade of dijon mustard, garlic, lemon juice, ground rosemary and olive oil. I let it marinate then cook in the oven or my rotissiere. I check the temp and when it hits about 155 I take out and let rest for 5 minutes before slicing.

if you have a slow cooker lately we love to do this:
pork loin - generously season with garlic powder, black pepper and cinnamon. put in slowcooker with:
chopped onion, chunky 4 apples, wedged 1/4 c apples sauce 3 tbs brown sugar
sauce comes things, so i thicken on stove with cornstarch! its so delish! could probably work in the over, just would not fall apart and be as tender!

I usually season it or put a glaze on it and bake it for as long as it says on the package. I love pork loin cus yuo can season it in a million different ways.

I just made a pulled pork in the slow cooker using a pork loin . It's easy and delish!
1 loin of pork 1 bottle of whatever bbq sauce you like pour it over turn the slow cooker on cook for 8 hours on low or 4 hours on high and pull apart with fork half way through. Serve on potato rolls with cole slaw on the side yummm
