if you have feta or mozz cheese you can make chicken rollatini with spinach and cheese.

Good ol' dependable grilled chicken with sauteed spinach
Or, if you have cheese (Mozz, jack, cheddar or even provolone) you can make a baked pasta with chicken and spinach.

I have ricotta, feta mozz, and mex mix cheeses.
I made a low fat mac & cheese with spinach in it last night - it tastes better the next day, that I am serving as a side.

Or you could do a chicken milanese: pan fried chicken topped with chopped greens, tomatoes and onions.
