is anyone gluten free?
how have you changed your cooking?
There is so much gluten free to buy and a lot you can make isn't even gluten, but I'm seriously freaking out about wheat.

I am. Diagnosed & started the diet 4 years ago. And just in these last 4 years, it has become so much easier.
Do you have celiac sprue? Or just a sensitivity to gluten?
No need to freak out. Once you get over the initial, overwhelming "I cant eat wheat" panic, you'll see that there is soo much out there.
I actually find dinner to be easy to cook GF now that I cook for myself. Mostly everything is GF at it's basic level. It's just a matter of taking the time and finding things that are easy to cook. DH is not GF...so when it comes to pasta I put up 2 pots of water and cook each type of pasta simultaneously but always drain my pasta first. For chicken cutlets, I bread & cook my cutlets first...and then take care of DH. Off the top of my head, those are the only two things I make special. Everything else I seem to be able to naturally make GF

DH was just recently diagnosed with having celiac disease. he freaked out at first too, which in turn caused me to panic too. he was a picky eater to begin with and now i had to work with cooking GF meals too.
but after the freak out we began to think and there really is a lot of options out there. he can eat meats, fish, rice, potatoes, veggies, fruits... and even at places like trader joe's or whole foods i'm finding that a lot of labels have 'gluten free" written on them. so he's still eating cereal, pasta, bread, cake, cookies, etc.
i think it also takes a little getting used to it too and some experimenting as well. i've found that making DH bread at home taste better than the GF breads at the grocery stores.
there are also tons of GF friendly blogs, websites and recipes to check out!

Thanks everyone. It's for my son. He is a candidate to be diagnosed with ADHD, since he has both severe attention/focusing issues and extreme hyperactivity. (He is too young to be formally diagnosed and too young for any meds)
A coworker is GF for celiacs and she told me she heard that it also helps ADHD. So I decided that it doesn't hurt and that the entire family is going GF in support.
I hope this helps DH's stomach problems too.
This is the list of stores that are GF friendly:
Trader Joe's Whole Foods Wild by Nature Value Drugs
There is also a bakery in Huntington that sells GF loaves of bread and an italian restaurant that makes GF pasta.
I hope I can do this!

dont forget Uncle Giuseppes! they have a nice selection too. If you live near Ronkonkoma, there's The Diet Shop on Portion Rd...awesome selection as well.
there's a brand called Ians that sells your typical "kid" friendly gluten free foods (chicken nuggets and the like)
I've found that Udi's is the best when it comes to bread/bagels/muffins - the best part is that there is no need to toast the bread to make it edible..lol
Betty Crocker has a line of cake/brownie/cookie mix out there. It's delicious!
Oh & for pasta - IMO, corn pasta tastes better than rice pasta. I like Sam Mills Pasta D'oro..

My friends son raves about Joans GF products. He is 10, loves her bagels and when they redid their kitchen, he got his own GF pantry. There are tons of blogs about restaurants in NY as well.
They love Risoterria in NYC...they even have amazing GF desserts incl. Black & White cookies.
