Can I start my baked ziti the night before?
Like would it be ok to boil the ziti the night before and maybe even mix it all up (ricotta, sauce, mozzarella with the pasta) and then just bake it the day of?
Trying to not spend all of Christmas Eve cooking for dinner that night.

Yep thats fine! Just take it out to thaw off before you put it in the oven.

I actually TRY to do that so the flavors meld together.
if you refrigerate over night, take it out hours before to let it get to room temp, so the cooking time is less and it doesn't dry out.

Absolutely! My sister made a baked ziti a week ago that she put in the freezer and is bringing it for Christmas.

Dumb afterthought - I can put it just in the fridge, right? I don't have to freeze it if I prep it just the night before, right?

Yes, DH does this all the time. If it's just over night then fridge is perfectly fine.
