Re: any great appetizer suggestions?
This is one of my favs:
Baked Brie Recipe
Can be prepared in 30 minutes or less. Ingredients
* 1 large sheet of puff pastry dough or 1 tube of refrigerated crescent dinner rolls * 1 round or wedge of Brie cheese (do not remove rind) * Raspberry Jam, or other sweet jam * Brown sugar * 1/4 cup of maple syrup
Method
1 Preheat oven to 350 degrees F.
2 On a stick-free cookie sheet, lay out the puff pastry or the crescent rolls flat; put brie round or wedge on top.
2 Spread jam on brie, fold dough over top, cutting off excess dough. Drizzle maple syrup and place a handful of brown sugar on top.
3 Bake at 350º for 25-30 minutes, pastry should be golden brown. Let cool for 10 minutes before serving.
Serve with crackers and apple slices.

Re: any great appetizer suggestions?
little red potatoes stuffed with lamb or beef or whatever you like
basically half boil the potatoes, then cut in half and scoop out the insides, stuff with your favorite meatball recipe, and bake
I like to sprinkle with smoked paprika, it will give off the most amazing smell. I love this with lamb.

Re: any great appetizer suggestions?
last year i made mini meatballs and rigatoni (use a toothpick to keep 1 meatball and 1 piece of pasta together) and then a bowl of sauce on the side and that was a hit!

Meat Candy 1 pkg. Hillshire Farms Lil Smokies 1lb. bacon, cut into thirds 1/4 cup sugar 1/4 cup brown sugar 1/4 cup water
Wrap each Smokie in a piece of bacon and lay seam side down on baking pan. Combine sugars and water and pour over Smokies. Bake at 450 until bubbly and caramelized.
Sandra Lee Sweet Onion Tarlets 4 tablespoons butter 1 vidalia onions or 1 other sweet onion, diced, about 3 cups 1 (15 ounce) box refrigerated pie crusts (recommended -- Pillsbury) 3 large eggs 1 1/3 cups half-and-half 1 (1 1/3 ounce) envelope golden onion soup mix 1 tablespoon find dried herbs (I used Thyme, garlic salt, and parsley) 1/2 cup shredded monterey jack cheese
Melt butter in a large frying pan over medium heat. Add onions and cook until golden brown, about 20-25 minutes Set aside to cool. Unroll pie dough 1 at a time. Use a 2 1/2-inch round cutter and cut as many rounds as possible (about 14 to 16), reserving scraps repeat with second pie dough. Gather together scrap dough and cut out as many rounds as needed to make 36 in total. Fit dough rounds into cups of mini muffin pan. Place in the oven and bake for 10 to 12 minutes. Remove and set aside. In a small bowl, whisk together eggs, half-and-half, golden onion soup mix, and fines herbs. Set aside. Divide onions among tartlet shells, about 1/2 teaspoon each. Top each with 1/2 teaspoon of cheese. Stir egg mixture and fill tartlets. Bake for 45 to 50 minutes.
Polynesian Meatballs 1/2 lb. ground beef 1/4 c. dry bread crumbs 2 tbsp. chopped onion 1 egg 1/4 c. milk 1/2 tsp. salt 1/4 tsp. black pepper 1/4 tsp. nutmeg

1 tbsp. oil 1/4 tsp. salt 1 med. onion, chopped 1 med. green or red pepper, chopped 1/2 c. ketchup 2 tbsp. vinegar 1 1/2 tsp. cornstarch 1 can (8 oz.) pineapple chunks or crushed pineapple (reserve syrup) 2 tbsp. sherry (opt.) Chopped green onion
1. To prepare the meatballs, combine all the ingredients in a bowl. Mix well. Form into small meatballs. 2. Fry a few meatballs at a time in butter, until browned and cooked through. Drain on paper toweling. Set aside. 3. Prepare the sauce. Heat the oil in a skillet. Add the salt, onion and green pepper. Cook until tender. Drain oil. 4. Combine the ketchup and vinegar. Stir into the onion-pepper mixture. 5. Make a paste with the cornstarch and reserved pineapple syrup. Add to the vegetable mixture. Cook, stirring, for 3 to 5 minutes or until mixture thickens. 6. Stir in the pineapple chunks and sherry, if used. Simmer for 3 minutes. Mix in the meatballs. Heat through. 7. Transfer to serving bowl. Garnish with green onion. Serve.

Re: any great appetizer suggestions?
My two biggest hits are lollipop lamb chops (even from people who swear they hate lamb) and roasted shrimp cocktail.
For the lamb I use frenched lamb chops. Marinate in lemon, salt, olive oil, lots of garlic and fresh rosemary. Throw in some Greek seasoning (if you don't have it handy a pinch of oregano and a dash of dried mint is all you really need). Marinate overnight. I grill them for best flavor. Yes - it's winter.. but grilling is the best prep. If not - you can roast them to medium rare. That's it and that's all. They are wolfed down like you would not believe!
The roasted shrimp cocktail recipe is Ina Garten's .. I add a little fresh garlic when roasting otherwise it's almost exactly as you see it on Foodnetwork.com!
