If you like sausage and peppers, try this spinoff from a RR recipe I made!
4 Italian sausage links, removes from casing 1 can diced tomatoes 2 cubanelle peppers, seeded and sliced 1 onion, sliced 3 cloves of garlic, minced 1 can low sodium chicken stock Olive oil Salt/pepper Red pepper flakes Parsley
Brown sausage in olive oil in Dutch oven. Allow to caraemelize and brown a LOT. Add onions. When onions are soft add garlic. Cook for 5 minutes then add peppers. Cook an additional 5 minutes till peppers begin to soften. Add chicken stock and tomatoes. Season w/salt, pepper, parsley and red pepper flakes (to taste). Bring to a boil for about 15 minutes then simmer.
Serve w/garlic bread.
THIS IS INCREDIBLE!!!! I made it this morning so we'd have it for dinner and it is just SO declicious. Tons and tons of flavor!!! also make a great big pot for leftovers!
ETA: RR used fire roasted tomatoes, about 4 cubanelle peppers and balsamic vinegar...I don't think you even need them because of all the flavor from the sausage and aromatics. And I think 4 peppers would have been overkills, as they are sweet and spicy enough.
