Re: any turkey meatball recipes out there?
I made DS 2 kinds of chicken meatballs.
I took 1 package of chicken chop meat, added my usual - breadcrumbs, garlic, egg... then split it into 2:
Chix Motz Meatballs: Added some petite diced tomatoes and shredded motz cheese.
Spinach-Cheddar: Added some chopped chopped spinach and some shredded cheddar.
Rolled them into bite sized meatballs b/c DS was a pain and would pull them apart if I there were cut.
Baked them in the oven and froze them. The froze amazingly well. Just zapped them for 10-15 seconds and dinner was ready for him.
I'm thinking w/ turkey add some cranberry sauce?

This recipe is simple but tasty! -1 pkg of ground turkey (93/7) -1 pkg of mozzarella cheese (I usually use part-skim) -1 can of chicken broth (msg free) - clove of garlic -some basil -egg/seasoned breadcrumb -rotini pasta
-combine the turkey meat with the egg/seasoned breadcrumb. -make mini meatballs (I think I usually use a teaspoon to make them all the smae size) -put some oil in skillet....sautee garlic -brown meatballs in the oil until browned -add in the chicken broth and continue cooking the meatballs in the broth -add in a little parm cheese -when meatballs are finished throw in the pasta and about 1 cup of the cooking water from the pasta pot -throw in the mozz cheese and basil and some more parm cheese -salt and pepper to taste. -
