I need a new chicken recipe
any suggestions?
DH doesnt really eat anything other than chicken and i'm starting to run out of ideas...so far i've made
stir fry fried baked curry jerk bbq

Your DH is a man after my own heart. I don't eat red meat.
Chicken quesedillas are super easy to make and my DH loves them. I also make chicken with peanut satay which is really good!

Ritz Cracker CHicken Cutlets is really good. use Veggie Ritz EVEN BETTER
i made 4 cutlet's) a stick of butter I made 4 cutlets so depending on how many you make increase.
1 stick of butter 1 sleeve of Ritz crackers (i used the veggie ones , you can use any kind) as many cutlets as you would like
crush the whole sleeve of crackers place to the side
melt the stick of butter
pre heat the oven to 350 and line a cookie sheet with aluminum foil spray with butter spray then dip your chicken into the butter then the crackers and place on the cookie sheet it will not really cover like bread crumbs once you have them all on the cookie sheet take the remaining crackers and sprinkle on top of the cutlets then drizzle the remaining butter on top cook for about 20 min or till golden brown and OMG your in for a treat I cooked it on the middle wrack
you can also use an egg instead of the butter , but man it was really really good!

I made this Chicken Rollatini recipe once with prosciutto and then a mix of ricotta, sauteed mushrooms & spinach, parmesan, romano, basil and black pepper.
I placed the prosciutto on the chicken breast and then about a tablespoon or so of the mix. I rolled the chicken and held it closed with a tooth pick and then sauteed the chicken in a fry pan.
it came out really tasty!

We only eat chicken or turkey in my house.
My favorite:
Slice up Chicken breasts into strips suatee in a pan with a touch of olive oil (I use a grill pan) In a separate pan, sautee onions and red peppers in olive oil once chicken is mostly cooked, add to the pan of onions & peppers Then add a jar of Sofrito and a small amount of peeled tomatoes Usually serve over rice.
Does he like Chicken sausage? you can do sausage & peppers- sometimes I take it after it's cooked, add sauce & mozz cheese and bake until cheese is melted.
How about chicken burgers? You can have with toppings!
Really, I take a lot of regular recipes and substitute chicken or turkey for the meat.
If he likes turkey too...Shadybrook farms makes turkey chops that are YUMMY.
You can do pasta (with tomato sauce or garlic & oil) with either grilled chicken, chicken sausage, chicken chop meat- even add in some veggies like Spinach, peas, broccoli...

I made this last night. I thought it was very good, and a nice change. I was a little too buttery, next time I am going to try dipping the chicken cutlets into the egg instead of the butter. The Ritz have a lot of butter in them already so the chicken dipped into the egg should be fine. Thanks for the recipe.

I made this for dinner! I dipped in egg instead! Put in for 25 min also drizzled some butter over them before I put them in! Very little butter.... came delish
