How Do You Sharpen Your Knives?

I have a Wustof Sharpener.. and it's not working well anymore. My mom used to use this guy that came around in something like an ice cream truck - but I don't know how to find him.

Do you have any recommendations for a good sharpener or for a person to sharpen them for me?

Also.. how long do your knives go before they need sharpening?

you're only supposed to sharpen them like 1x or 2x each YEAR!

every day you should hone them though.

I guess that could sound like I sharpen them every other day, huh? I hone them several times a week with a honing rod - but do not sharpen them often at all. My better knives last longer .. but my cheaper knives are dull within 6 months. I have a Wustof Precision Edge 2 Stage for sharpening. I do not use it for honing.

I'm looking for someone to professionally sharpen my knives too.
I know about that ice cream truck guy - he usually winds up in the development BEHIND ME. By the time I get my knives together, drive like a madwoman down the street and up into the development - POOF he's gone !

I hone them and that helps, but need to get that really good edge on them again.
