Vegetarian Thanksgiving
Need a couple of main dish ideas.. please we have guests keeping the 40 days before Christmas fast, so no meat or fish.
I'm really trying to keep away from pasta and eggplant parm

also, check out Giada's vegetable parmesan - it's a different take on eggplant parm and it was REALLY good.

looks good.. but I don;t think tofu will fly.. my DH has prewarned me with no "faking" it.. which I did last year..

Longtime vegetarian here. I agree on the "no faking it" thing...here's a few links that will help you, all from Vegetarian Times magazine. They focus more on produce, pulses, grains, and dairy then using tofu/fake meat:
A Moosewood Thanksgiving (the strudel recipe sounds delish)
Southern Style
Winners from a recipe contest...these sound fantastic!
Maybe a pot pie or savory strudel as a main dish with a bunch of vegetarian-friendly sides? Let me know if you need any more help or suggestions!

thank you!!! these are aweosme.. i think the pot pie idea would be great (maybe even indvidual pot pie) since we are doing cornish hens!!
oo this gets me excited.. i think the sides except for the stuffing (i think) will be vegetarian friendly, need to double check on that..

You're welcome! You can always make two stuffings...or better yet, if one of the veg guests asks what to bring, tell them to bring veggie-friendly stuffing! Can I come by? I'm getting hungry LOL!
