a really simple way we would eat it is pasta with tomato sauce and sliced fried eggplant on top. it's my FAVORITE - with tons of grated cheese of course.

we also make it baked in the oven... you can basically make spaghetti with meatsauce (we add peas and sometimes mushrooms), fry eggplant and slice them up. add salt or grated cheese... mix it all together in a big bowl and put it in a baking dish (with either crisco or sauce on the bottom to prevent sticking... for this dish we usually crisco) and bake in the oven for about an hour or until edges start to brown.

I also add it to lasagna.

I seriously LOVE eggplant.
