Think I might try this tonight...
Chicken with Pesto and Mozzarella Cheese
4 5 ounces each, skinless, boneless, skinless breasts 1 1/2 teaspoons store bought pesto 1 ounce skim milk mozzarella cheese, sliced into 8 thin strips olive oil cooking spray
Preheat oven to 375F.
Cut a pocket in each breast, being careful not to cut thorough the chicken.
Place 1/4 teaspoon pesto in each pocket and add 2 thin slices of the cheese. Using toothpicks close the pockets and place on a baking sheet.
Continue the process until you have all 4 chicken breasts readied for the oven. Spread the remaining 1/2 teaspoon pesto on top of the chicken breasts and coat with cooking spray.
Bake the chicken for about 20 minutes until cooked through. Allow to set for 5 minutes, before serving. Remove the toothpicks before serving.
We'll see how it turns out!

sounds good.. i have a 7454837594 packets of chicken breast in my freezer.. DH will only eat chicken breast.. and I'm tired of the same ol same ol..

One thing I highly recommend is to make your own pesto...SO much better tasting and fresher and cheaper than what you buy in the store. SO easy to make and I won't ever go back to store bought pesto again.

I was astounded at how much better it tasted homemade. I used about 1 cup of basil leaves, 4 cloves of garlic, 1/4 of parm cheese, 1/4 cup of toasted walnuts and then streamed in the olive oil. I was eating it with a spoon It was also nowhere near as oily as it is in the jar.

no pine nuts?? omggg.. that's awesome.. i roasted pinenuts in a skillet once and I think I went overboard with it.. this about 3 years ago.. and I thought pesto always required pinenuts..

Pesto comes from northern Italy and it's made there with pine nuts but you can substitute walnuts. Most of the cooking shows on TV use walnuts.

I make my own as well. I will usually make a bunch, and freeze the extra. You just have to be sure to lay saran wrap touching the top of the pesto so it doesn't oxidize and turn brown.

Yeah you can use ANY nut with pesto...and I prefer to use the walnuts for their omega fatty acid content over pine nuts.

imo, the thin ones might work best.. i'm not a fan of thick chicken breast, i pound mine silly
