buttercream disaster

I made two batches today. One, vanilla, right off confectioners sugar box and one of the hershey cocoa. Both were runny messes. what did i do wrong? Any one have a better recipe than these that aren't so sloppy? Chat Icon

I've never had a problem with buttercream being runny...what consistancy was your butter? Was it just regular butter or a blend?

eek...i used regular butter, nuked it in the microwave.....might be my problemo....it said softened, so i nuked it to melt it..

thanks everyone!

kinda figured....i'm not a good baker b/c i don't follow directions and measure that well...i am a better cook b/c you can't see if something didn't work or whatnot as much.


now, another question, another disaster was those plastic bags and pointy tips...is there a way to secure them...i was shooting icing and it was going all over the place....it is everywhere...those tips wouldn't stay put! any tips for next time?

sounds like you melted the butter instead of just softening it....

if you need to nuke it, just do it for like 10 seconds at most.

buy a "coupler".... that will help with the bags/tips.

oh yeah, i totally melted it...next time i will soften instead...i just am a very impatient person, hence why i am not a baker. i am not precise and just throw things together, now i see that is why things i bake don't work!

cooking, i love, you really can't mess it up, baking i think, is too precise for me. i will try softening and looking into a coupler next time, seems like a fun hobby if only i can get icing to form properly! thanks again.

you know....i tried that with the chocolate batch and then got stumped...so just push it though...cut it a bit?

there is buttercream all over my house...not a good idea to try this in front of real housewives reruns....buttercream on the couch, on the floor, on the dog....total nightmare..Chat Icon

Yes you put the tip into the bag the cut the bag tip half way up the tip in the bag so it only pokes out half way then fill the bag, should work perfectly

Make the hole in your piping bag smaller than you think it should be and only let your tip "peek" out!

the butter.. it should be semi soft to cold. i usually soften it, cut into cubes and chill it in the freezer right before i use it..

It sounds like you cut the bag too high up. Just make sure the tip is sticking out the bottom of it. Couples *definitely* help keep everything in place, too!

And in the future, just had confectioner's sugar to thicken icing! Chat Icon
