Easy Cakes?

Hey everyone! Today is my mom's birthday!! We'll be having dinner and cake on Sunday and since I've been so into it lately, I've been asked to do the baking. YIKES! Anyway, I'm looking for a cake recipe, but something simple since I have little time on Saturday to bake/decorate. I had seen a couple recipes, has anyone tried these and can tell me how they came out or recommend a tasty, but still pretty simple recipe for me to try out?! TIA everyone!!!

i would go red velvet. i made it last weekend and it was a big hit, and it was SUPER moist, which is key. Here is the recipe I used:

1 package of yellow cake mix
1 package instant vanilla pudding mix
4 eggs
1 ounce of red food coloring
1/2 cup vegetable oil
1 cup water
1 tbsp white vinegar
1 tbsp unsweetened cocoa powder

Frosting
1 stick of butter
1 8 ounce package of cream cheese
1 tsp vanilla
1 box (maybe slightly less) of confectioners sugar
cinnamon to sprinkle on top


Preheat oven to 350. Grease pan. Mix together cake mix, pudding mix, eggs, oil, food coloring, water, vinegar and cocoa. Pour into pan. Bake for 35-40 minutes.
Cool.

Beat together cream cheese, vanilla, room temperature butter and confectioners sugar. Refrigerate, then ice.
