Anyone have a good mahi mahi recipe?

I have a couple pieces of mahi mahi for tonight's dinner but I've never made it before. I tend to like my fish in a lemony wine sauce or oreganata style but would love to hear if any of you have recipes for mahi mahi. TIA

do you like fish tacos? mahi mahi is awesome in fish tacos, i always use it for that!

I had one that was pistachio crusted with a pineapple cream sauce in Key West...delish!!!

I love to blacken fish, especially Mahi Mahi! I put a little, little bit of olive oil on both sides of the fish. Sprinkle blackened seasonings on both sides, my ex-h liked it well-coated, I was less heavy handed with mine.

While prepping the fish, heat a cast iron skillet on high until it is smoking. Place fish in skillet and cook 3-4 mins on each side or until fish is released from bottom of pan (this is when you know a proper crust has been formed). Since the fish has so much flavor I serve it on top of wilted spinach and a side of plain white rice which soaks up all the spicy delicious juices.

Warning: Your kitchen might get a little smokey.
