Ok I need a 30min meal!
I dont think I ever posted on the food board before, but I need to make something quick before DH gets home. I feel bad I didnt do anything yet. Whats a quick recipe? Of course I have no meat defrosted, but I have vegetables, eggplant, pasta, rice, etc. I need a good quick recipe please!

roasted eggplant with pasta? do you have any tomato sauce you can mix with that? maybe you can throw together an eggplant parm? or just make eggplant "cutlet" parm!

you can try searching kraftfoods & allrecipes with ingredients you have on hand..

I'd saute onion, garlic and small chunks of eggplant (and zucchini or yellow squash if you have it) in a little olive oil (if you have pancetta or bacon then I'd fry that first and take it out - use the drippings with the olive oil for the saute) Add 2 chopped up tomatoes and maybe a can of tomato sauce and a little wine. Drop in some mozzarella if you have it... little chunks. Add salt and pepper to taste. If you did have bacon or pancetta and crisped it up - add it back in now.
Make the pasta and then toss it with the veggies and tomato. Serve with a salad and a glass of wine.
