Please help me make chicken soup.

Can someone please share their easiest receipe for chicken soup? I am a cooking disaster & not feeling well :(

The ONE time I tried making chicken soup, I dried out the chicken, it wasn't edible.

The easiest way ...

Take chicken pieces (mainly legs, thighs) and throw them in a pot with chicken stock and water.
Add 3 celery stalks, 2 carrots, 1 quartered onion, fresh dill on the stalk, fresh parsley on the stalk, fresh thyme on the stalk (they sell 'soup greens' at the supermarket that has everything here if you need to make it easier on you).
Season with Salt, Pepper, Italian Seasoning

Boil for 1 hour.

Drain stock back into pot. Discard the veggies/herbs.
Shred the chicken (it should just fall off the bone anyway.)
Add diced carrots, celery (and anything else you want in there)
reSeason as needed.
Simmer for 20-30 minutes until veggies are cooked.

Add precooked pasta, noodles or rice to soup when it's finished.

Cheaters Chicken Soup !

Depending on the size of the pot:
Large Cans of chicken broth- (I use Lower sodium one.)
Baby Carrots- throw in as much as you like
Onion- peeled and cut in quarters
Celery- I use 2- 3 stalks
Some parsley and dill ( I bunch it up and tie in string and attach to handle on pot later on I take it out, just cut it at the handle and throw out.)
1 turnip peeled and cut up in pieces
1 parsnip- peeled and cut up in chunks
Chicken legs - again it depends on size of pot when I make a massive amount of soup- 12 qts I use 15 chicken legs a smaller pot I use 3-5 legs.
A little sprinkle of garlic powder and black pepper.

Take chicken legs and all other stuff and put into pot, bring to a slow boil. Turndown to a low simmer. Let cook about 1 hour or until chicken is cooked all the way, leave lid on 3/4 of the way. take out chicken legs , put in plate, take off skin and cut up chicken into little pieces and throw back into pot. Some fat might be floating on top , skim it off. Take out greens as stated above, and take out onion and turnip and parsnip, unless you like it in there. Cook additional 30 minutes about. Continue to leave on lid /4 pf the way.Serve hot and with precooked noodles or rice .

I am so going to try adding this to my soup- do you just do the broth or add all the other stuff that I add too? DH has a sinus infection so I want to make him soup .

we add all the other stuff, let it cook, then strain it out before adding the pasta. it never even occurred to me to cook the pasta separately.

the only reason I will cook it seperately is to cook it & rinse it off to halt the cooking process to avoid mushy pasta/rice/noodles and to avoid adding starchiness to the soup.
I only cook the starch in the soup itself when I make a small pot of soup and am going to eat it that night. But if I make a big pot and refridgerate/freeze some, I will cook it seperately then add it in.

Yeah I follow the above recipes. Chicken soup seems like it is sooo hard, I remember my mom making it and it taking like HOURS....but really its a dump and go recipe. Dump chicken, herbs, and veggies in either water or chicken broth and voila! I like using chicken breast only though Chat Icon

this is my easiest chicken soup.

take 6-8 chicken thighs rub with salt, pepper and dijon mustard.

brown in a bit of olive oil in a heavy pot on both sides. (may have to do two batches)

while the chicken browns, chop a whole onion, 3 celery stalks a few carrots and 2 or 3 cloves or garlic. if you want potatoes I would also peel and dice 2 or 3 and add them with the veg.

once the chicken is browned, removed from pot. throw chopped veggies into the pot and sautee in remaining fat/oil. after a few minutes, throw in a bay leave or two, and some dried thyme.

put chicken pieces back into pot. add 48 oz chicken stock. add 2 sprigs fresh rosemary (or a pinch of dried rosemary leaves) and 1/2 cup white wine. let simmer for 30 or so minutes. at this point, I also add any quick cooking veggies...zucchini, spinach, chard etc. could also add broccoli and peas

adjust for salt and pepper. serve with warm crusty bread or tortellini (I cook separately)

the dijon lends it such a nice flavor. I am not a great chicken soup maker but this one is surprisingly very very good.

In a big pot I put in 3 chicken cutlets, no bone, no skin, baby carrots, corn kernels, low sodium chicken stock. I season with poultry seasoning, a little adobo and sometimes an onion soup mix package. I let it come to a boil and simmer until the chicken falls apart. Then I add spaetzle.

in olive oil, i throw into pot carrots, celery, onions

season and soften.

then i add broth. bring to boil. pieces of chicken breast thrown in for 8 minutes.

down to simmer.
I add mushrooms, can of diced tomatoes and can of black beans.

simmer covered about 15 minutes.

For me this is the easiest. I hate cleaning a whole chicken and the oil it leaves in the soup. I only use chicken breasts. I throw 2-4 breast in a large pot of water. I roughly chop a few carrots, celery, and an onion or two. I add a chicken boulion and a small can of tomato puree. Let it boil for an hour or so. I then add brown rice and let it continue to boil until the rice is tender. I remove the chicken breasts and shredd them (separate the meat into bitesize pieces) The more chicken breast/vegetables, the chunkier the soup will be. Add salt/pepper to taste.

I love this for myself because it is filling, and my 17month old just eats it all up. When in the mood, I'll add other veggies (like 1-2 diced zucchini or a pepper). Adjust the recipe to your preference. I keep changing mine depending on what I am in the mood for.
