Hello my itailian friends.
Would you say your cooking is 100% authentic or somewhat americanice. My mother was Japanese and her food was 100% and too much for me so she would tone it down some but it was still too much so she would make something else for me.

My parents do, and I try. I just try to cook healthier versions. We cook northern italian...not alla parmigiana everything. Red sauce and cheese is not the only italian way to cook as many assume.I have so much more to learn from their old school ways. I try very hard though!!

i try it is very time consuming. I will never use sauce from a jar and will always make my own sauce.

I ALWAYS say I am "Brooklyn Italian" . My mom is an incredible cook but both her parents were born here. Sure some recipes are authentic but more are IMO American Italian.
I studied in Italy and have been several times-- and the food there versus my mom's (and mine) is not a like at all

A small and minor pet peeve of mine is that when people assume Italian cuisine only consists of tomato sauce. There is sooooo much more!! My parents hardly ever use tomato sauce, ever! They say it masks the true taste of good quality food. Its just the way their region cooks...some regions cook with tomato sauce, just not most . It is an american interpretation kwim. Ugh ok vent over.

just like Lasagna, baked ziti, chicken/eggplant parm are AMERICAN ITALIAN dishes. They don't serve that in italy!

I'm not 100% Italian. But my grandma is. I cook some of her recipes and I also try to find authentic ones online. But I'm not against jarred sauce - especially when i work late (Although i do make my own sauce often). My grandma is northern italian, so a lot of her food - as others have mentioned - is not sauce based. My grandma also cooks a lot of authentic german food. My grandpa was german and I think his mom (great grandma) taught my grandma how to make a bunch of things.

Both parents were born in Italy and my mother cooks like a TRUE italian! Just like others have mentioned,,,very rarely does she use sauce.
