Making pizza on pizza stone
I have the dough, sauce, and cheese. Anyone have any tips when using a pizza stone? How long do I keep it in the oven for?

Re: Making pizza on pizza stone
Put Olive oil on the stone before you roll the dough out and then then just a little on the actual dough before you put the toppings on.
I put it in at 350 for about 1/2 an hour. it might take more time if you have a thicker crust.

Re: Making pizza on pizza stone
I make pizza on the stone all the time, it is the best tasting pizza ever! -First, warm up the stone in the oven @375 for 20 minutes to make the stone hot (that way the bottom will crisp up). -While the stone is warming up roll out the dough on the counter with flour. --Carefully take the stone out of the oven then put olive oil or cornmeal on the stone (I use cornmeal, no oil). -Lay the rolled out dough onto the stone (be careful it's hot!) - then put on all the topping etc. -Cook for about 20 minutes or so. Good luck!

You want to REALLY heat the pizza stone before you get your pizza dough onto it. You want to put it into a cold oven on the lowest rack and then turn the oven on to 450 or even 500... let it sit in there for at least 30 minutes! (You can time this with the rising of your pizza dough).
Dust it with cornmeal before you put your pizza dough on so that it won't stick. I usually roll my dough out on a cutting board or cookie sheet dusted with cornmeal and then transfer to the pizza stone to bake.
You also might want to use a pizza peel to help get it off the stone (I always end up using a HUGE spatula).

this is how peter reinhart explains it. he's a master bread maker. i use his pizza dough recipe.
i don't have a pizza stone, i just use an upside-down cookie sheet
