This is a good recipe I made last night. I kinda made it up and sort of used a recipe I found as a guide. I dunno if it is my favorite, but it was very good.
1lb ground turkey 1 large can crushed tomatoes 1 14oz can red kidney beans (not drained) sliced white mushrooms 1 sweet onion, chopped 2-3 cloves of garlic, finely chopped 1 tsp kosher salt 1 tsp red pepper flakes (add more if you want) 1/2 tsp heaping cumin 1/2 tsp heaping chili powder 1/2 tsp heaping cinnamon oil (1 tsp-1tbsp) (I used olive oil)
Grated cheese (cheddar or colby) Sour Cream
Heat oil in pot over medium heat. Add onion and cook for 3-5 minutes. Then add the mushrooms and cook another 3-5 minutes. Stir in garlic. Cook for a minute. Then stir in the salt, red pepper, cumin, chili poweder, and cinnimon. Add teh turkey and cook till brown. Then add the crushed tomatoes and stir. Then stir in the red beans. Cover and reduce heat to medium low or low. Simmer covered for 20-25 minutes. Stir well before serving. Serve with grated cheese and sour cream if desired.
This is my favorite Chili. I usually buy the cans or flavor packets when i go to Ohio. But making it from scratch is awesome. Its not your typical chili.
Cincinatti Chili Ingredients 1 tablespoon vegetable oil 1/2 cup chopped onion 2 pounds ground beef 1/4 cup chili powder 1 teaspoon ground cinnamon 1 teaspoon ground cumin 1/4 teaspoon ground allspice 1/4 teaspoon ground cloves 1 bay leaf 1/2 (1 ounce) square unsweetened chocolate 2 (10.5 ounce) cans beef broth 1 (15 ounce) can tomato sauce 2 tablespoons cider vinegar 1/4 teaspoon ground cayenne pepper 1/4 cup shredded Cheddar or Colby cheese 1 diced sweet onion Oyster Crackers
Directions -Heat oil in a large saucepan over medium heat. Add onion and cook, stirring frequently, until tender, about 6 minutes. -Add beef, in batches if necessary, and cook, breaking up with a wooden spoon, until browned. -Add chili powder, cinnamon, cumin, allspice, cloves, bay leaf, chocolate, beef broth, tomato sauce, cider vinegar, and red pepper. Stir to mix well. Bring to a boil. Reduce heat to low; cover and simmer 1 1/2 hours, stirring occasionally. -Remove the bay leaf. Reheat gently over medium heat. Serve over hot, drained spaghetti. Top with shredded cheddar cheese and diced onion, and oyster crackers Also makes an excellent filling for tacos.

This is my absolute favorite! There MUST be some in my freezer at all times. I used the chicken from a whole roasted chicken or if I'm lazy a rotisserie chicken from the supermarket.
Ingredients 1 tablespoon vegetable oil 1 onion, chopped 3 cloves garlic, crushed 1 (4 ounce) can chopped green chile peppers 1 tablespoon chile powder 2 teaspoons ground cumin 1 teaspoon dried oregano 1 teaspoon ground cayenne pepper 2 (14.5 ounce) cans chicken broth 1 large can crushed tomatoes meat from one 4 pound roasted chcken 3 (15 ounce) cans beans (black, canellini, kidney beans) 1 can corn (or frozen)
Directions 1.Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, green chile peppers, cumin, chile powder, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, tomatoes, chicken, corn and beans. Simmer 15 minutes, stirring occasionally. 2.Remove the mixture from heat. 3. Serve with sour cream, cheese, and tortilla chips.

I make a spicy and sweet chili.
1lb ground turkey 1 packet low sodium chili seasoning Cayenne Chili powder Garlic powder 1 can black beans 1 can kidney beans 1 bell pepper, diced 2 cloves chopped garlic 1 onion, diced 1 cup frozen corn 1 1/2 cans crushed or diced tomato 1 tbsp tomato paste
Sautee onion, pepper and garlic till translucent. Remove from skillet and brown turkey meat. Transfer to stock pot and add remaining ingredients except for corn. Simmer on medium for about 1 hour, you want the flavors to meld. Add corn. Simmer an additional 15 minutes, or until corn is tender.
Serve w/cheese, chopped onion and cornbread!
