Post your tomato sauce recipes!!!

i heat up some olive oil in a large pot and add in some diced onions, i wait till the onions brown a bit and then add a can of tomato puree and a can of crushed tomatoes (the best brand i have used is Sclafani, but others like redpack or tutorosso have been good too). i also fill up one of the cans almost to the top with water and add it in, mix, put some salt and pepper and then just turn the stove to low and let it simmer for a few hours. it makes a lot of sauce.. if i want to make sauce with meatballs or sausage i will add it in the pot (brown them first) before putting the cans of sauce in.

ETA: also just occasionally mix the pot a few times when cooking

I pretty much do the same thing but I never add diced tomotoes (just two jars of sauce and some paste mixed with hot water). We have the fresh jars of sauce that my family prepares in August but If I buy the sauce at the store I like Hunts or Redpack the best.

I sautee onions and garlic in some EVOO. Then I brown some pork bones or sausage or beef bones. I deglaze the pot with a splash of dry red wine. I add 1 can of crushed tomato, 1 can of diced tomato, half a can of tomato paste, fresh basil, oregano, a pinch of sugar, some salt and red pepper flakes. I let simmer for about 4 hours. I remove the bones and discard, or save the sausage for later. Usually at the end I add some more basil, Italian seasoning, etc.

ETA: Ophelia reminded me that I usually use a mirepoix too, celery and carrots w/the onion.

marina- long lazy sauce

the ratio is use is 3 cloves of garlic and one half chopped onion and a quarter of a cup of chopped carrots to 1 28 oz can of tomatoes. usually I do 2 cans.
so

1 large onion, finely chopped
6 (or more) cloves of garlic, minced
1 carrot, peeled and finely chopped

sautee the above in olive oil and a sprinkle of salt and pepper until onions get soft, at least five minutes. add

dried oregano, basil, parsely, red pepper flakes and continue cooking.

add 1/2 cup (or more Chat Icon ) white or red wine (I use whatever's around white wine makes a lighter sauce, red is slightly deeped IMO) boil for a few minutes.

add 2 cans of crushed tomatoes (I too like Sclafani or Contadina or Cento San Marzano when I'm rich Chat Icon )

let simmer for a few hours. right before it's done I'll add FRESH chopped oregano, basil and parsely. and usually I hit it off with parma cheese. taste for salt and pepper.

done.

marina- quick sauce

12 or so plum tomatoes (about 2 lbs) half chopped onion, 2 garlic cloves minced, same dried herbs and wine as above.

sautee onions and garlic. add dried herbs and wine, add chopped fresh tomatoes cook down for 20 minutes add fresh herbs. add either chicken, shrimp or veggies for a fast quick and easy primavera.

I don't really follow a recipe.

I like to cook up ground sausage onion, mushroom, and garlic and then throw together can of diced tomatoes (or crushed) with either a can of sauce or paste (depending what I have on hand) and then I mix it all up. I throw in whatever fresh herbs I have on hand (Basil, thyme, oregano) and also throw in some dried herbs. A pinch of sugar to kill acidity. a little bit of kosher salt and a little bit of black pepper. Sometimes i add some dried red pepper flakes if i want a kick. Then I let it all cook for at least 30 minutes. Longer if I have time - tastes better if it is cooked longer.

its always a little different for me. lol. But always comes out good! You can do it without the meat. And if you are missing the mushrooms, thats fine too. And I have made it without the onions and it was fine. I do it to taste or adjust according to what i have on hand.

i use my grandma's recipe and then i experiment with meat sometimes.

i start with some oil on the bottom of the pot and add diced oniion and garlic (1 or 2 cloves ove garlic, about half an onion)
IF im making a meat sauce then i add chop meat and brown it and then add the sauce....if no meat...move onto the next step.
when the onion and garlic become fragrant i add about 6-8 cans of crushed tomatoes (i make a big batch and freeze it). i add usually a few tablespoons of tomato paste and sometimes one can of tomato puree.
i add about 1 tablespoon of the following: basil (fresh is better but i use dried a lot), parsley, oregano. i add some salt and pepper, also red pepper flakes. i throw in a pinch of sugar. then i add 1/4-1/2 cup of marsala wine (i think its red cooking wine).

if im cooking meatballs i will fry them a little in a frying pan and toss them in the pot to continue cooking. i also put short rib in the pot (givs great flavor) with or without bone is fine.
Cook on low for about 4 hours with the cover ajar.

I don't follow a recipe per say, I go by taste and texture. But for the most part:

1. diced onion and a few cloves of garlic with som EVOO cooked until the onion is translucent

2. add crushed tomatoes & diced tomatoes (1:1 ratio of large cans) and some tomato paste

3. add basil, parsley, italian seasoning, etc to taste

4. cook on low for a few hours. and if I add meatballs I put them in for the last hour or two.
