FUN DESSERT! "Faux-stess" Cupcakes!

Steve (DH) and my dad have both always loved Hostess cupcakes, but they're both very into being healthy and haven't had them in a long time. A few weeks ago, my Dad bought some Hostess cupcakes as a little treat for the two of them... and after all the anticipation, they both said they were NOT like they remembered! They said the cupcakes were dry, there wasn't enough filling, and they were TOO sugary sweet.

So, I went to the food blogs to find a copycat Hostess cupcake recipe and here are the results:

FAUX-STESS cupcakes. some with swirls. some personalized with "Loey" and "G-Pop" (my dad's nickname), and "Stevie" etc. They were really easy and fun to make... and boy were they delicious!

They cupcakes are SO moist, they nearly melt in your mouth. The filling is thick and sweet. The ganache is smooth and creamy, and hardens like the real cupcakes after sitting for a little bit.

Notes: I could have filled the cupcakes a little more so that they all rose over the cupcake liners.... that way when I dipped them into the ganache, it would have covered the cupcake instead of getting on the sides of the liner.

I also could have waited a little longer for the filling to chill which would have let it harden up a bit for making the swirls and writing on top.

I also should have waited a bit longer until the cupcakes were completely dry on the inside as well before filling... and could have used a bit of a bigger tip to fill the cupcakes.

You should really become a chef since you are good at it & love to do it & help people like me who can't cook to save their life
