I made Smores Cupcakes and OMGGGGG
I usedThis recipe from Annies Eats and they came out SO yummy, probably the best cupcakes I've ever made.
I went rogue on the icing because I don't have a blowtorch (haha) and opted to frost in french vanilla icing which I topped with graham cracker crumbs, chocolate pieces, a marshmallow and a little piece of a Hershey's bar.
My coworkers are in love with me today! hahaha
Sorry for the crappy pic but I took it with my blackberry!

Edit to add, LOVE your icing change! The marshmellow icing was not a hit with my family !

I'm slightly dubious about adding a cup of boiling water to the batter...can someone talk me down...tell me it will be alright!!!

LOL I was too, it makes the batter loose to the point where you're like WHAT???? This can't be cupcake batter, but now i'm convinced that its what made them so moist and delicious!
Do you feel better yet?

LOL I didn't use their frosting, I put classic vanilla icing in a pastry bag and just used it to top.

OMG is right, I made these today for my pudding club and they were a huge hit!
I made the marshmallow frosting and used my mini blow torth to toast it...very delish!!
