Turkey meatloaf from HELL
I just made turkey meatloaf and must have done something like too many breadcrumbs..that thing looks like a football and to be honest I could throw it and break a window.
recipes please for next time? I stuffed it by the way with cheese

i prefer to use oats instead of breadcrumbs..... the last time i used a multigrain hot cereal cause i was out of regular oats

egg
ketsup or tomato sauce

I made an awesome chicken meatloaf last week. I don't know exact measurements, but I'll try to tell you approx.
-1 lb ground chicken -1 cup blanched then pureed mixed vegetables (believe it or not, this is for my DH. I have to hide veggies in food for his sake. DS loves vegetables!) -1 egg -maybe a half cup milk (maybe less) - maybe a half cup breadcrumbs (again, maybe less) - around a 1/3 cup grated cheese - garlic, salt, pepper
i bake for 45 minutes, then put sauce on top and baked for 45 minutes more (at 375). It came out so moist and my DH said it was the best I ever made. I was so afraid b/c raw, it looked kinda green from the veggies. but it didn't look that way cooked

here's my meatloaf recipe i love
1 lb ground beef or turkey
1 box frozen spinach thawed; squeeze out extra water
1 large onion finely chopped in food processor
2 large peeled tomatoes chopped or small can of diced tomatoes not seasoned (Del Monte)
2 envelopes of Sazon Goya seasoning
1 cup of grated cheese (I prefer pecorino romano)
A pinch or so of paprika
Pepper
If no cheese, add salt
Bread crumbs, either seasoned or plain
Pre-heat oven to 400*
Mix everything, except bread crumbs, in a bowl
Put in 13 by 9 pan; flatten out into an oval shape and slightly raised in the center; try not to let meat extend to the edges of the pan
Sprinkle bread crumbs on top.
Cook for about one hour.

mine recipe is the same as the link above, plus other stuff:
couple splashes of worstershire chopped garlic Ketschup over the top bacon on top of the ketchup on top italian seasoning thyme instead of ketchup in the mieat mixture i use tomoto sauce... then i pour the rest of the 15 oz can around it and add onion so there is a little more sauce to put over it when we eat it! Funny... this is what i made last night!

I made turkey meatloaf for dinner last night:
Basically:
1 lb ground turkey 1 egg 1 packet lipton's onion soup mix some Worcestershire sauce about a cup (maybe a little less) panko italian style breadcrumbs 1/2 cup of ketchup
Shape, cover with ketchup, bake at 375 until internal temp reaches 165 degrees (or 45 minutes or so)
Last night I made it with eggplant but that takes forever because you have to cook the eggplant first separately. DH just loves it though so I went to all that trouble for him.
Sometimes I just use onion flakes instead of the onion soup mix. If I use onion flakes, I put salt & pepper in. I don't if I use the mix packet because it's salty enough already.

Then I cook the eggplant in a little vegetable oil for about 30-40 minutes until it's really soft and tender. (That's how I make eggplant in general.) Once it's completely cooked, I just take it and mush it into the ground turkey mix along with everything else. It's way easier to do if you've made eggplant and have leftovers than starting from scratch since it adds an hour to the whole meal, which is annoying.
DH just loves eggplant in the meatloaf... I don't know why. It ends up having a very velvety texture and not tasting like meatloaf.

Thanks. I'm always hiding vegetables in foods for DH. I may just give this a shot!
