Tues: Baked Talapia with lemon and dill and Ophelia's Butternut Squash Risotto (TY)
Wed: bbq steak,crash potatoes, & sauteed veggies
Thurs: Butternut squash soup in a small portugese bread bowl for me and Italian wedding soup & grilled cheese for DH
Fri: Leftovers or Pizza

I tried it for the first time tonight. Came out yummy. I changed things slightly. made 1/2 the recipe, added carrots, italian seasoning in place of oregano, tomato sauce in place of crushed tomatoes (I hate chunks) and white canellini beans instead of kidney. I cooked the pasta (I used tubettini) separately and added it to each bowl so it woudn't get soggy. Added a ton of freshly grated cheese. Yum!
Ingredients
3 pounds lean ground beef 1/2 cup olive oil 4 cups chopped onion 2 cups chopped celery 2 (4.5 ounce) jars bottled minced garlic 1 teaspoon coarsely ground black pepper 8 (14 ounce) cans beef broth 1 (28 ounce) can crushed tomatoes 1 (6 ounce) can tomato paste 2 1/2 teaspoons dried thyme 2 1/2 teaspoons dried basil 2 1/2 teaspoons dried oregano 2 tablespoons dried parsley 2 cups ditalini pasta 2 (15 ounce) cans kidney beans, drained and rinsed Directions
In a large pot over medium heat, cook beef until no longer pink. Drain and set aside. In the same pot, heat the olive oil. Cook onion, celery, garlic and black pepper until vegetables are tender, 10 minutes. Stir in beef broth, crushed tomatoes and tomato paste. Season with thyme, basil, oregano and parsley. Cover, reduce heat and simmer 1 hour. (At this point, you may put the pot on a back burner to keep warm and continue with the next steps about 1 hour prior to serving, if you wish.) Stir in the beef and simmer 15 minutes. Stir in the pasta and cook until al dente, 8 to 10 minutes. Stir in the beans and heat through, 10 to 15 minutes.

Salsa Chicken in a Crockpot
Ingredients: 2 packs of boneless skinless chicken thighs (or you can use chicken breasts) 1 packet of taco seasoning mix* (I make my own- recipe below) 1 jar of salsa (has 2 cups in it)
Directions: 1. Mix taco seasoning with chicken and place in crock pot. 2. Cover with a jar of salsa. 3. Cook on low for 6 to 8 hours or on high for 3 to 4 hours. (Personally, I cooked on high for 1 hour and then switched to low for another 5 hours).
My own notes: 1. This makes 8 servings- I cook in bulk to freeze. 2. I shredded my chicken in the last half hour so we could use it to make enchiladas. I served it with corn tortillas, shredded mexican cheese blend, sour cream, guacamole and other fixins. 3. Some people like to add a rinsed/drained can of black beans or corn for more flavor.
*Taco Seasoning Mix (from allrecipes.com) 1 Tbsp. chili powder 1/4 tsp. garlic powder 1/4 tsp. onion powder 1/4 tsp. crushed red pepper flakes 1/4 tsp. dried oregano 1/2 tsp. paprika 1 1/2 tsps. ground cumin 1 tsp. sea salt 1 tsp. black pepper
Mix all together in a bowl and you have taco seasoning!

I am having such a tough time figuring out menu idea's these days, it's good that I can see what you all are eating for dinner!
SUN - We had a big lunch so all we had was warm Apple Pie w/ vanilla bean ice cream
MON - Escarole & bean soup w/hot Italian Turkey sausage, Garlic breadsticks
TUES - Beef Stroganoff over buttered egg noodles, peas, & roasted carrots
WED - Chicken Piccata, rice, roasted broccoil
THUR - Turkey Chili, rice, Cornbread
FRI - Probably out, friend coming in from OOT
SAT - Have no idea yet!
