need help with the birthday menu.....I am trying to take it easy though to don't kill me
so, I am TRYING to go easier on myself with food this time around. I am making a few things, in abundance, and I would like to call it a day with that but tell me if you think it'll "do". people are driving a long way to come to my house so I try to make it worth the drive.
here is Luce's 1st birthday menu
eggplant parmiggiano meatballs and sausage with red sauce plain ziti roasted zucchini tossed salad lots of crusty bread
I don't have ANY apps planned. maybe just some cheese, cured meats, and crackers. I really don't want to do any either, but I will if I 'have" to.
I plan on having wine and beer for the adults. would fresh pressed apple cider be ok for the kids?
for dessert, I am having a vellow cake with chocolate ganache covered in fondant. I was also planning on picking up a few pies from our local farm (they are awesome)
should I do cupcakes also? cookies?
as part of the favor, the kids are making caramel apples. I will have extra to make for departing adults as well.
and finally, in terms of making ahead, if I make the eggplant in those aluminum trays and froze it, will I have an problem with taste from the metal and the sauce?
if so I will suck it up and just cook everything the day before. but I was wondering if I could cook this weekend and freeze for two weeks. I WILL NOT do this if it affects taste at all though. In that case, I'll just do the meatballs and the sauce b/c I can freeze in plastic.

Okay so basic summary:
Appetizers- Cold antipasto platter (cheese, cured meats, etc.) *I'd add some thinly sliced pieces of a crusty baguette with pesto to make it more filling
Main Dishes- Eggplant parm Meatballs & sausage with red sauce Ziti (plain)
Sides- Roasted zucchini Tossed salad Crusty bread
Drinks- Wine Beer Apple cider
Dessert- Yellow cake with chocolate ganache covered in fondant Assorted fresh pies Caramel apples
When you write it out like that, it does seem like enough! You've got good, hearty food... something for meat & nonmeat eaters... it sounds good to me!
I don't think you need to do anything else, but if you want to be like me and make those big chocolate chip cookies from the other thread (they are SUPER EASY!) I don't think anyone would object

that post actually made me nervous that I needed another goodie. especially since I am not doing a candy table.
if I have time I'll make the cookies.
no thoughts on the make ahead aspect? I am so nervous about this!

I would make the eggplant ahead of time and freeze them in plastic baggies. Then defrost and assemble the dish the night before. Pop it into the oven the day of the party. I wouldn't put it all together and freeze through. It will take forever to defrost, heat up and it might dry up.
As for the menu. It looks good. I personally would do another meat (like lemon garlic chicken pieces (legs, thighs, and breasts cut into 3's) but I always make too much. But what you listed really is enough.

I would do more beverages, since you have beer, wine and apple cider, Maybe bottles of water or ice tea, soda...etc.

My mother always prepares & freezes the eggplant in a tin for Christmas. She takes it out the morning of and uses a sterno to heat it up. 25-30 people have never complained and there is almost never any left in the pan(s).

The menu sounds good, if anything I would maybe add a chicken dish (like piccata or something) to the main meal.
Also drinks, maybe add some soda & water bottles for adults, juice boxes for children to make it easier than pouring into cups (reducing spillage). I think the cake and pies are fine, no need for cupcakes. Cookies maybe but not necessary.
Never froze in metal trays but I'm sure it would be fine.
