Re: I need sauce recipes!!!
I make a lot of cheese sauces.
Start with a basic rue:
3 tablespoons butter 2 tablespoons flour 1 1/2 cups milk (you can do cream if you want it thicker)
Place a small saucepan on medium heat. Heat butter until it's melted bubbling, then whisk in flour. Quickly so it doesn't chunk up as easily. Let cook for about 20 seconds. Turn heat down in whisk in milk until it's as thick as you want it. You can always add one more TBSP of flour too.
Then turn heat to low add whatever kind of cheese you want (blue, gouda, etc.) and one teaspoon of nutmeg. And keep adding cheese until it's as strong of a flavor as you want.

Re: I need sauce recipes!!!
basic marinara..then I add meatballs or sausage sometimes.
3 cans of tomatoes (san marzano) 28 oz (1 can of peeled plum tomatoes and 2 cans crushed.) tomato paste One sweet onion (spanish or sweet but not vidalia) 2 tbl of crushed garlic or 4 cloves olive oil salt pepper crushed red pepper oregano parsley red wine 1/2 cup grated romano cheese
sautee onions in olive oil til translucent then add garlic and sautee for about 2 minutes. Salt and pepper.
Add tomatoes crushing the plum tomatoes in hand and then putting in the pot. (I do this over the pot). add the crushed tomatoes. With each can of tomatoes I add 1/2 can of water. (it also helps to get the rest of the tomatoey goodness out of the can. Season with all spices. Add tomato paste (about 2 oz)
Simmer on med low for about 30 mins. covered. taste. adjust sprices. Cook for another 30 minutes with the cover a bit off and add 1/2 cup red wine.
Cook for another 30 mins uncovered and taste. Adjust seasonings again and add cheese. Stir and let sit with no heat for about 20-30 mins.
The rest is history!

This sounds so yummy... I am going to try it this weekend!
