Re: What can I substitue pasta with?
What about if you just eat a little whole wheat pasta and load up more on protein and veggies? I believe in moderation and making things convenient too.
So, for example I'll make a chicken dish with pasta, but I'll add lots of veggies, eat 2 servings of the veggies (or salad) and not deprive myself of a 1/2 cup of pasta.

There is a quinoa blend pasta that comes in spaghetti or elbow form, it is a complete protein so that may be one option.
You could also use spaghetti squash.

Shirataki Noodles? They are tofo noodles. Rinse and roast them - sautee in a pan and the water comes out. I make them in to pad thai, cold sesame noodles....wonder how they are with red sauce.

It's actually a big, round yellow squash/gourd. On the little sticker on the squash, it will say spaghetti squash. The way I make it is to wash it, cut it in half, scoop out the seeds (there are pumpkin like fibers inside). Get a cookie sheet ready; rub both halves of the squash with a little bit of olive oil (inside and outside of squash). Then place both halves faced down on the cookie sheet. With a fork pierce the outside of the squash a few times. Bake at about 375 for 45-50 minutes. The edges should be a little brown. Allow to cool so you can handle the squash. Then with a spoon scoop out the inside into a bowl...it will come out into shred-like spaghetti. Top with your favorite sauce...delish!

Fiber Gourmet pasta is much lower in calories and higher in fiber than regular pasta. I have tried it and it's not bad. I couldn't stand the Shirataki noodles.
