Is there some trick to picking fresh garlic?
Today I bought garlic - they all look the same to me but to my dismay the one I chose was starting to go bad. Is there a way to tell which ones are better?
Sorry if this sounds ridiculous - I usually buy the garlic in the jar but wanted to try fresh....

noooooooo.... dont use the jarred garlic and oil. Maybe you just had a fluke experience.
I choose a firm head of garlic, and make sure the skin is white and clean. no brown and mushy spots. It should last pretty long, in a dry/cool area. I usually just leave mine on my vegetable/fruit stand on my counter. It stays nicely.

Big no no on the jarred garlic.
A head of garlic should be firm and dry. Look for traces of purple in the skin also. Keep it in a dry place.

its not bad at all to use, but i think the jarred garlic is a little bitter. i dunno, it just doesnt have that FRESH taste

Most supermarkets have already peeled fresh garlic in a container...just put them in a ziploc so the fridge doesn't smell like garlic. They are usually nice big cloves and easy to use.

I've used this before and love it - just grab and go! BUT.. the garlic flavor tends to be MUCH more mild than when it is fresh from the bulb so you may need to use more of it in recipes. It really doesn't have that nice sticky texture that you get normally - so if you are making a garlic paste it's a little more difficult. Also - it does go bad. You should use it within 5 days.. 7 tops. You can see that it gets brown spots and starts to take on a rancid scent if not used quickly.

Fresh garlic has a sweeter taste than jarred garlic does. Jarred and dried garlic have that stereotypical garlic taste that can stay in your mouth forever, whereas fresh just gives it a little mellow flavoring.
I usually go for the pre-peeled stuff the supermarkets sell. But if you don't get that, then you can open it up the same way they do on the cooking shows (by slamming it when your knife) or if you're afraid to do that, with the bottom of a glass jar.
