I do a lot of quilting, if you have never quilted before you could start with a rail fence or a 9-patch; they are really easy and go quickly!
This week I am also going to make an apron for my niece - she wants to be a baker so I am putting together a little basket of tools/cookbooks.
Here is the apron(the one on the bottom left)

I find the easier projects are making pillows and curtains/valances.
I have not sewn in years but I love to. I used to make my own clothes/coats.
Check patterns to make bags too. I got a few pattern and they are so cute. I got the pattern at Walrmart.
