I've made this and it always comes out great. I cooke the veggies until they are soft. use butter, not margarine and also add some poultry seasoning. I usually buy a rotisserie chicken and use the meat from that. Nice and easy.
Ingredients:
1 cup potato, diced 1 cup onion, diced 1 cup celery, diced 1 cup carrot, diced 1/3 cup melted margarine 1/2 cup all-purpose flour 2 cups chicken broth 1 cup half-and-half 1 teaspoon salt 1/4 teaspoon pepper 4 cups chicken, cooked and chopped 2 pie crusts (either store bought or your own recipe)
Directions:Prep Time: 1 hrTotal Time: 1 3/4 hrs 1Preheat oven to 400°F. 2Saute onion, celery, carrots and potatoes in butter for 10 minutes. 3Add flour to sauteed mixture, stirring well Cook one minute stirring constantly. 4Combine broth and half and half. 5Gradually stir into vegetable mixture. 6Cook over medium heat stirring constantly until thickened and bubbly. 7Stir in salt and pepper; add chicken and stir well. 8Pour into shallow 2 quart casserole dish and top with pie shells. 9Cut slits to allow steam to escape. 10Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.

I just made the Classic Chicken Potpie recipe from the Pillsbury website. If you have cablevision there is an instructional video on channel 653.
It was super easy and the best I have had. DH loved it and wants me to make it again soon.

I make it from total scratch at least once a month for DH. I make my pastry from a "Barefoot Contessa" recipe. It is time consuming & a huge mess to roll out the dough & wash the food processor. I think totally worth it though!! I do have it down to a perfect science but I have never written the recipe out.

Preheat oven to 400
2 cups frozen mixed veggies thawed 1 cup perdue chicken short cuts, chopped 1 can Cambells cream of potato soup.
Mix, throw in some salt and pepper. Line a 9 inch baking dish with Pillsbury roll out pie crust (I am not sure of the exact name, but its a red box) Pour mixture in, cover with another rolled out pie crust. Slice 2 holes on top to vent. Bake about 20 min or until crust is browning.
Delicous!

I always make this one, I use uncooked chicken breast as suggested and Oronoke (sp?) frozen pie crust.

OMG...you all rock
I went to supermarket on my lunch and got my ingredients and came home and made my pot pie. I am pregnant and have been craving one! I had my laptop opened to this thread as I sliced and diced and whipped up my delicious pot pie. I took a bit of all of your recipes and it came out d.e.l.i.c.i.o.u.s
