Weekly Menus Anyone? 8/29

Sunday: Chicken Noodle Soup, Homebaked Herb Rolls, Rocket Salad

Monday: Angel Hair Pasta with Summer Sauce, Chicken Sausage, House salad

Tuesday: Turkey Taco Tuesday.

Wednesday: Roasted Rosemary Chicken breasts, Rice, Gravy, Grilled Veggie Salad

Thursday: Fried steak on Hard rolls with Melted provolone and sauteed onion & mushrooms, Cucumber salad

Friday: Chicken Lo Mein

Saturday: Back To School Barbecue

OMG I was just going to post this!! We have some of the same things on our menu this week!

Sunday - Ravioli, Meatballs, Semolina bread

Monday - Buffalo Chicken Wraps, Celery & Carrot sticks

Tuesday - Taco's w/all the fixin's

Wednesday - Philly Cheese Steaks on garlic break, Oven Fries, Salad

Thursday - Grilled Chicken, Rice, String Beans & Roasted Carrots

Friday - Not sure yet

Saturday - Not sure either we may have a BBQ

Just a fresh tomato sauce - light and a little lemon-y:
I saute some garlic in olive oil and then take the garlic out and add some dry white wine (Chardonnay or Sauvignon Blanc is good here). I don't know how much I add.. I'd say probably a good 3/4 of a cup. When the wine starts to cook down I put the garlic back in, squeeze in some lemon juice - probably about 3-4 lemons. And added some freshly chopped tomato.. maybe 2 cups or so? Cook until heated through and fragrant.. maybe 8 minutes or so? Add salt to taste, throw in some fresh basil and toss it with the pasta. Then add some good Reggiano.

I'll join, I always lurk on here for inspiration:

Sunday: Pork Spare ribs, mashed potato & broccoli

Monday: work function, DH is on his own (prolly eat leftovers)

Tuesday: Turkey chili & brown rice

Wednesday: steak on the grill w/ veggie & salad

Thursday: General Tso Chicken, broccoli & brown rice

Friday: pork chops, sweet potato fries, green beans

Saturday: probably bbq!

sunday- spaghetti and meatballs

monday- chicken tacos and refried beans

tuesday-hamburgers and fries, baked beans

wed- chicken tenders (frozen from bag) with BBQ sauce, spring beans and spanish rice

thrs-I have school, he will eat at his mothers

friday-pasta and salad

sat-pizza??

sunday: Gnocchi with prosucitto and provolone

mon: taco's..I keep saying I am going to make these and havent in ages lol

tues: chicken marsala, string beans, brown rice

wed: broiled filet of sole with lemon, baked potato, veggie tbd

thurs: turkey sausage, peppers and onions

fri; maybe sushi

Tuesday - Turkey meatballs and spaghetti
Wednesday - Honey mustard and French herb chicken, mushroom risotto, string beans

Mon.- Rigatoni ala vodka, salad with balsamic dressing

Tues.- Chicken souvlaki, hummus, tzatziki sauce

Wed.- Dry rubbed, BBQ ribs, beans, coleslaw

Thurs.- Marinated grilled flank steak, sauteed onions, pierogies

Fri.- ???

Mon: stewed chicken thighs with potato's and carrots, corn on the cobb, rice
Tues: shrimp scampi, sauteed zuccini, baguette
Wed: sancocho (ground beef, corn, diced peppers "stew") rice, black beans, salad
Thurs: pasta and peas with grilled sausage, salad, baguette
Fri: off!

only cooking 4 nights/week now

Monday: baked jumbo shrimp scampi over angel hair pasta, mixed greens salad, popovers

Tuesday: buttermilk grilled chicken, fresh garden tomato slices, couscous

Wednesday: poblano turkey burgers with chipotle ketchup, homemade baked potato chips

Thursday: greek salad with grilled chicken

Tuesday: Buffalo chicken with garlic mashed potatoes for DH and salad for me

Wednesday: Italian chicken roll-ups

Thursday: Grab a quick bite to eat - DH has a meeting

Friday: Tacos for DH / Taco Salad for me

Saturday: Out to dinner

Sunday: TBD

Sunday: Brisket and bone-in chicken in the smoker (YUM!!), rosemary and garlic roasted potatoes, simple sauteed green beans.

Mon: Asian chicken stir-fry with red peppers, snow peas, cashews and shitake over glass noodles (did not make last week)

Tues: Campanelle pasta with salmon, spinach, pine nuts and goat cheese.

Wednesday: Grilled chicken sausage over warm spinach and vegetable salad (roasted fingerling potatoes, asparagus, red bell peppers, portobellos) with fresh mozzerella and balsamic and dijon viniagrette

Thursday: Roasted tomato soup with tortellini, arugula salad

Friday: take out

Tues: Out

Weds: Orange chicken w/brown sticky rice and sesame veggies

Thurs: Chicken fried steak w/potato wedges and glazed carrots

Fri: Steamed tilapia w/lemon couscous and broccoli

Weekend is up in the air!

it's really simple.

1 lb ground meat (I use bison)
about a half of a diced onion or more to taste with a couple of diced pieces of garlic. half of a red bell pepper diced.

saute the veggies until fragrant (3-5 minutes), add in ground meat and pump up the flame while incoporating veggies, add a bit of red tomato sauce (for some kick I use goya sauce with chipotle) salt, pepper, ground cumin and either adobo or garlic powder if needed. when the meat is cooked through I add the corn (either frozen corn or fresh corn pre cooked) mix together and season to taste.

it's really just a hodgepodge. my MIL also adds small diced potatoes when she makes it which I LOVE.

no, we have them separate, but feel free to add them. it would be more like a chili then, I suppose, but certainly can't taste bad! Chat Icon
