spinach
how can i cook the fresh leafy kind
i have never made it by itself, just mixed in with outher foods

I usually saute it in a pan with olive oil and minced garlic. If you like mushrooms, add those too, and some hot pepper flakes. It makes for a reallu good side dish, but just a warning...spinach cooks down a LOT...since the leaves wilt and all...so a pound ends up looking like less than half a pound.

You dont have to add any other veggie to spinach. It is yummy on its own. For very simple way, boil a pot of water, put the spiniach in till it cooks down (a minute or so) and drain. I drizzle some olive oil and viola!
Or like the PP suggested, saute some garlic in olive oil, add the spinach and just cook it down. Viola!
You can squeeze some lemon juice on it as well if you want.
I love spinach because it is quick and easy!
